Caribbean Ponche de Creme | Trini Christmas Drink

Some describe this traditional island Christmas drink as 'Caribbean Eggnog'. The creamy, alcohol infused beverage, makes family gatherings and gift-giving ever more festive. Enjoy the recipe we use in our home.

Ingredients

6 eggs

Peel of one lime


1 In a large stainless steel bowl, whisk eggs and lime peel till pale and aerated.

2.5 cups condensed milk


2 Add the condensed milk to the mixture, while whisking on a low speed. Increase speed, to combine well.

3.5 cups evaporated milk


3 Incorporate evaporated milk and whisk.

1.5 cups white rum

1 tsp. Angostura bitters


4 Pour in white rum and bitters. Stir with a spoon.

1 tsp. Ground nutmeg

​​5 Sprinkle nutmeg into mixture and give it a quick whisk.

​​6 Using a fine mesh strainer/ funnel, store in glass bottles and refrigerate. The beverage can be stored for a couple weeks. The longer it is stored, the more intense the flavor.

​Serving suggestion: ice

​​7 Serve chilled, over ice.
