Easy Mashed Pumpkin or Squash | Spicy Pumpkin Mash | Manta Meals

Pumpkin is a highly dense nutritional vegetable and greatly satisfying to eat. I have noticed I can go longer between meals when I eat pumpkin. The recipe on this page is my go to when I'm in need of a budget friendly meal. Yup, pumpkin is inexpensive and goes a long way.


Enjoy this spicy pumpkin or squash at breakfast or dinner; that is almost too easy to prepare.

Ingredients

1 pound of peeled and diced pumpkin/ squash

1 Prepare the pumpkin by removing the skin, inner fibers and seeds (I keep the skin and fibers for compost and the seeds for roasting). Cut pumpkin into about one inch cubes. Set aside.

1 small chopped onion 4 large garlic cloves, minced

2. Chop the onion and mince the garlic.

1 small hot pepper

3 If you can tolerate hot spices, finely chop a hot/ chile pepper. Discard the seeds; using the seeds will make the dish even spicer.

3 tablespoons coconut oil

4 Add the oil to a saucepan over medium heat. When oil is hot, add the onion and garlic. Keep stirring to prevent garlic from burning. When the onion and garlic become fragrant (about 40 seconds or so) add pepper. After another 15 to 20 seconds, add the pumpkin and toss to coat with the fragrant oil.

1 teaspoon pink himalayan salt 1/2 tablespoon brown sugar *heavy cream (only if needed)

​​5 Sprinkle in salt and sugar, and combine. 6. Lower the heat and cover. The pumpkin will release liquid. Be sure to stir ever so often, to prevent sticking. The vegetable will also begin to soften and as you continue cooking will form a mash. *If the pumpkin is too spicy at this point, you can add a couple splashes of heavy cream to lessen the 'heat' from the pepper.

​1/2 teaspoon ground cumin fresh chopped cilantro

7. For the last 5 minutes of cook time, uncover pan and allow some of the liquid to evaporate to desired texture. Sprinkle with cumin and chopped cilantro. Serve with rice or serve as a side dish with your favorite meal.
