I wanted a healthy alternative to the store bought strawberry sauce. My family loves a fruit topping on ice cream and pancakes. The quickest recipe for a fruit topping is compote. And it is so delicious and easy to make.

Ingredients | Directions | |
1 pound frozen strawberries 1/3 cup granulated sugar 1 tablespoon lemon juice | 1 In a stainless steel saucepan combine strawberries, sugar and lemon juice. | |
2 Over medium heat (combine ingredients well so that sugar does not burn) bring to a boil. 3 Reduce heat to low and simmer covered for 5 mins. The strawberries will release their juices (there is no need to mash). | | |
4 Now we work uncovered. Stir occasionally until mixture is near the consistency you desire. *Important to note: the compote will thicken when cooled and even further when refrigerated; so turn off the heat with the mixture somewhat fluid. | | |
5 If you desire a smoother compote, use a hand mixer to blend slightly. | | |
Serving Suggestion: Serve right away on pancakes or waffles or refrigerate before serving on ice cream! | 6 Store in a mason jar and refrigerate. | |
